Emerald is the middle green of the shelf’s three and the most decorative of them. It is bright enough to be a color in its own right rather than a background, which puts it at St Patrick’s Day tables, at Christmas alongside gold, and at any party where green is the point rather than the setting.
Against food it is the trickiest of the three, because a saturated green surface pushes anything green on a plate toward gray. Salad and herbs photograph better on hunter or on black. Cake, on the other hand, looks excellent on emerald.
